1. Bring water with a little salt to a boil. Add sweet potato and cook for 2-3 minutes, or until tender. Drain.
2. Heat about a tablespoon of oil or butter in a pan. Saute the onion until translucent, then add garlic.
3. Add potatoes and crumble chorizo into pan. cook until chorizo and potatoes are lightly browned on both sides.
We put the filling and a little cheese in fresh corn tortillas lightly brushed with oil, then we fry them ourselves for a very street taco.
