A message from Chef Dave

Feeding 100 "live-ins" and a small number of "live-outs" the foodservice at the Fiji House is one of the largest volume operations in the UW Greek System. Lunch and dinner buffets are provided Monday-Friday during the school year. Breakfast is self-serve and features a cereal bar, toast and bagels, breakfast burritos, and waffles. Saturday and Sunday dinner buffets and a Sunday brunch buffet are also provided.

The Fiji foodservice is the only one in the UW Greek System which is opened 12 months a year. Box lunches and buffet style dinners is provided Monday-Friday for Fijis choosing to live in the house during the summer quarter. Weekly Rush BBQ dinners are a highlight of the summer program.

The Fiji kitchen is staffed by one full time chef, a Kitchen Manager, and seven "rag crew" members. The foodservice is administered by the Food Committee Chair. All positions with the exception of the Chef are held by current members of the Fiji House.

The rag crew members wash dishes, make late plates, put away leftover food, and clean the kitchen and dining room. On weekends, rag crew members cook Saturday and Sunday dinner and Sunday brunch. The Kitchen Manager is the liaison between the Chef and the residents of the Fiji House and supervises the rag crew.

Menus are designed to appeal to the tastes of the current Fijis, be nutritionally sound and contain a lot of variety. Fresh fruits and vegetables are served daily. Whole grain options are common. A wide variety of ethnic cuisines are featured. The menus operated on 6 week menu cycle. Three different menu cycles are offered, fall-winter, spring and summer. There are many special events meals throughout the year including: Back to School BBQ, Oktoberfest, Holiday Buffet, Family-Style Thanksgiving Dinner, Valentines Day Date Dinner, Mother-Son Dinner, and various Sorority Dinner Exchanges.

The Fiji kitchen has recently been remodeled and is the best facility in the UW Greek System. The dining room is handsomely finished in dark woods and features long tables and benches which encourage family style eating experience.
