Does anyone know anything about freeze drying with liquid nitrogen? Thinking about trying it this weekend...
I made ice cream a few weeks ago and it worked out great. From what I've read it seems like drying and freezing food for storage/camping would work similarly (ie cook, put in metal bowl, pour in LN2, stir).

I think you'd still need a drying step. The advantage of LN2 would be freezing the food very rapidly, preventing the formation of large ice crystals that rupture cells and turn vegetables into mush. But just freezing with nitrogen won't dry the food. For the second step, you would need a vacuum freezer so as to sublimate all the ice away... I think.

Yes, I think you are right. I don't think my lab would appreciate using our vacuum chamber for this...back to ice cream making for me. :D
