Not sure if this is quite Know-how, but eating is important.

Anybody have secrets to or examples of eating luxurious meals in the back country? Any personal favorites?

I love freezer bag cooking, but I want to save those for when it's necessary.

Last summer I passed some guys in the back country cooking pancakes, bacon, and eggs. It looked and smelled amazing but I can't imagine easy to clean up after.

For the first night out, before leaving town, my parents cut meat into strips, put the strips into a sturdy plastic bag or two with a juicy marinade (think something along the lines of soy sauce, chopped garlic, chopped ginger, & sesame oil), freeze the bags, then let them thaw while they hike in. Stir-fry over high heat in a pan where each strip rests on the bottom of the pan (not a jet boil). Using plenty of oil or a non-stick pan helps clean-up. To clean the pan, wipe it with a (paper) towel that you pack out. This works for tofu, too.

For breakfast, you can buy little plastic egg carriers for 2-6 eggs that will hold up in a backpack. Again, plenty of oil or butter in the pan. Use common sense when it comes to spoilage & storage- this is more appropriate for cooler locations.

For dessert when snow camping, bring a pre-made graham cracker pie crust, fill with instant pudding (if it calls for milk, use powdered milk & water), and let set in the snow. Pudding sets pretty reliably in the snow- if it doesn't set, it's still delicious, just quite messy. Bring a spoon.

And don't forget decent wine in a box or good beer in cans.

I like backcountry fudge: mix roughly equal portions of peanut butter and dry brownie mix, with water added as necessary.

I think NOLS has a pretty good approach to eating well in the backcountry all explained in their cookery (http://www.nols.edu/store/product.php?productid=16302). They focus on longer trips, though it can be amended for shorter trips.

In short, their method is to bring fewer items that are more versatile (ie brining flour to make scones in the morning, pizza dough at night, etc). I am also a huge fan of their spice kit idea, which just consists of getting a few plastic vials (Nalgene makes good ones) to put a few of your favorite spices in. It can seriously improve your meal and make your feel like a gourmet genius in the backcountry.

Ok, I'm done endorsing NOLS. If you're wondering where to get all the bulk items that the cookery suggests, I would first look at WinCo, the land of cheap bulk foods ...there isn't one in Seattle, but it's cheap enough to warrant an occasional trip to Federal Way in order to stock up.
