Pay de Datil (Date Pie)
San Ignacio is a small mission town in Central Baja cushioned by a lush and expansive grove of date palms. I bring you their culinary specialty:

Combine soft/melted butter with crushed graham cracker or "galletas" of your choice and press into the pie pan.
Blend (1) egg, (1 cup) dates, (1 cup) walnuts, (1 can) condensed milk, (1 tsp) vanilla extract and fill pie pan.
Bake at 325F for 40 minutes. Let cool and allow the puff from the egg to settle, piercing the top if needed.
The result is dense, delicious and packs well.

Ethan brought this to my house last week... it is friggan amazing. Make this the next time you want to make something exceptionally nummy. I know I will.
